Thinking about firing up the grill this summer? Put down the meat thermometer and step away from the flame—David Walzog needs to impart some wisdom on you first. A revered grillmaster and executive chef of SW Steakhouse and Lakeside, Walzog is set to share top trade secrets during his Grilling With A Master workshop, part of the Wynn Master Class series. Attendees will spend the afternoon with Walzog, learning the inside scoop on everything from how to select perfectly flavorful cuts of meat—(buy from a local butcher shop graded USDA prime) to achieving a blue ribbon-worthy char.
“Everyone thinks that cooking great steaks at home is difficult,” he says. “Using years of experience, we will show the tricks of the trade to recreate the great char on the exterior of the steaks while not overcooking them.”
Walzog says he’ll also explain common grilling techniques and mistakes, such as not cooking at a high enough temperature. “High heat is the number one requirement to make sure the steaks have great char and are tender, juicy and cooked to desired temperature.”
After the interactive cookout class, attendees will enjoy a lunch at SW that also includes the results of their newly acquired grilling skills.
“It’s an intro to selecting great steaks, a visual of what to avoid when buying steaks, what a hot grill really means and how to control the heat,” Walzog says. “And finally for our guests to experience their own steaks straight from the grill.”
